Ability to choose emails' font family and size in user settings

As a user, I would like to be able to specify in my user settings what kind of font family and size will be used in all emails sent by me (new emails and replies). Currently when I am responding to client's email font from client's emails is automatically applied and I need to change it manually to e.g. Arial 11. This should be user setting, not case setting.

It would be great to be able to set a default font & size for all emails (Email, Reply, Forward options) either at customer or at service level.
It seems to be hit or miss whether you get Arial or Times New Roman. In addition, if an agent changes their signature to a certain font like Century Gothic for example, the first couple lines of the email is still Arial or Times New Roman....
